Chicken Caesar Wrap with Classic Caesar Dressing

1 small pumpkin, peeled and diced

1 cup couscous

1 red onion, thinly sliced

Mixed salad greens

Dressing of your choice (classic Caesar, coleslaw, or cheese sauce)

1. Preheat your oven to 200°C (400°F).

2. Place the diced pumpkin on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20-25 minutes or until the pumpkin is tender and slightly caramelised.

3. Meanwhile, prepare the couscous according to package instructions. Fluff with a fork and set aside to cool.

4. In a large bowl, combine the roasted pumpkin, cooked couscous, sliced red onion, and mixed salad greens.

5. Drizzle the dressing of your choice over the salad and toss gently to combine.

6. Serve the pumpkin salad immediately as a side dish or as a light main course.

Note: This pumpkin salad pairs well with a classic coleslaw dressing, cheese sauce or pepper garlic parmesan sauce for added flavour. Adjust the dressing according to your preference. Enjoy!
